  • 1/3 cup (63 g) granular sweetener (erythritol, allulose, or a mix)
  • 3 tbsp (15 g) cocoa powder
  • 2 tbsp (21 g) protein powder (chocolate, vanilla, or unflavored)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs, room temperature
  • 1/3 cup (79 ml) avocado oil
  • 3/4 tsp vanilla extract
  • 1/4 cup (59 ml) leftover coffee or water (add more if needed)

Chocolate Mousse

  • 1 large egg
  • 2 large egg yolks
  • 3 tbsp (30 g) allulose (or xylitol)
  • Pinch of salt
  • 1 1/3 cup (315 ml) heavy whipping cream, divided

  • 1 1/2 oz (43 g) unsweetened chocolate, chopped

Instructions

Cake

  • Preheat oven to 325ºF. Grease an 8-inch round pan with a removable bottom, line with parchment, and grease the parchment.
  • Whisk coconut flour, sweetener, cocoa, protein powder, baking powder, and salt. Stir in the eggs, oil, and vanilla until combined.
  • Add coffee a little at a time until the batter is thick but scoopable.
  • Spread in the prepared pan and smooth. Bake 15–20 minutes, or until the top is just firm. Cool completely in the pan, then run a sharp knife around the inside to loosen.

Chocolate Mousse

  • In a heatproof bowl over barely simmering water, whisk the whole egg, yolks, allulose, and salt. Whisk in 1/3 cup of the heavy cream.
  • Whisk constantly until frothy, thicker, and lighter in color; the mixture should reach 160ºF.
  • Remove from heat, add the chopped chocolate, let sit 5 minutes, then whisk smooth. Cool to room temperature.
  • Beat the remaining 1 cup heavy cream with powdered sweetener and vanilla to stiff peaks. Fold whipped cream into the chocolate mixture in three additions.
