  • 1/2 tsp vanilla extract
  • 1 1/2 cups almond flour
  • 1/2 tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp butter, , softened
  • 3/4 cup Swerve Sweetener
  • 2 large eggs, , room temperature

Toffee Sauce:

  • 6 tbsp butter
  • 1/4 cup Swerve Brown
  • 1/4 cup Bocha Sweet, or allulose sweetener
  • 1/2 cup heavy whipping cream
  • 1/2 tsp vanilla extract

Instructions

Cake:

  • Grease a 7-inch ceramic souffle dish. If you want to take the pudding out of dish whole, line with a circle of parchment paper on the bottom and grease the paper as well.
  • In a small bowl, whisk together the Yacon syrup, hot water, and vanilla. Set aside. In a medium bowl, whisk together the almond flour, cocoa powder, baking soda, and salt.
  • In a large bowl, beat the softened butter with the sweetener until light and fluffy, about 2 minutes. Beat in the eggs one at a time until well combined, then gradually beat in the almond flour mixture.
