  • 6 ounces (170.1 g) pre-cooked breakfast sausage, chopped
  • 8 large eggs
  • ¼ cup (59.5 g) heavy whipping cream
  • 1 tbsp butter
  • 2 green onions, sliced
  • 4 ounces (113.4 g) Cabot Seriously Sharp Cheddar, grated

Instructions

  1. Preheat the oven to 400F (200C) and spread the cauliflower out on a rimmed baking sheet. Drizzle with the oil and sprinkle with salt and pepper. Toss to combine.
  2. Bake for 15 to 20 minutes, until roasted to your liking (tender-crisp and lightly browned). In the last 5 minutes of baking, add the chopped pre-cooked sausage to the pan to warm through.
