These simple PB2 (powdered peanut butter) Overnight Oats are made with oats and milk and then layered between sweet ribbons of fruity jam. It's a decadent but protein-packed breakfast!

Our husband has been on a peanut butter binge lately. He puts peanut butter on peanut butter, and we have a front-row seat to the show.
Luckily, we don't mind it, because he introduced us to PB2®, a protein-packed peanut butter powder that has all the flavor of peanut butter, but with a fraction of the fat and calories.
While there are so many uses for peanut butter powder (think smoothies, shakes, and dips), we love adding it to oatmeal because it's a breeze to blend in. Add some jam, and you've got yourself a happy little breakfast in a jar!
What stands out
- Easy to prepare. PB2 overnight oats do their thing in the fridge while you sleep.
- It's a meal prepper's dream. Make several jars to have for breakfast all week.
- Toppings are customizable. In the morning, layer the oats with fruit jam and any toppings you choose.
- Less guilt. PB2 has fewer calories and less fat than traditional peanut butter, yet still packs a decent amount of protein.
- Tastes like childhood in a jar. All the nostalgia of a classic PB&J! Kids will love it.
What you will need
- Rolled oats use old-fashioned oats not instant or quick cooking. Save the steel-cut oats for our apricot oatmeal.
- Milk You can use any milk you like.
- PB2 or other powdered peanut butter You can use any brand of powdered peanut butter.
- Chia seeds Chia seeds will add a touch of fiber.
- Fruit jam, spread, or jelly Choose your favorite fruity jam. Use what you would if you were making a PB&J sandwich.
- Bananas, fresh berries, chopped nuts or a drizzle of peanut butter for topping For added texture (optional).

How to prepare
To assemble these oats, have a few lidded jars or containers ready. The jars should be able to hold about 1 cup (ours hold 10 ounces).

Step 1. Combine oats, milk, PB2, and chia in a small jar. Cover and shake to combine.

Step 2. Refrigerate overnight. When ready to serve, add the jam and any toppings.

Expert tip
Choose glass jars or containers over plastic. Plastic containers often leave a residual taste from foods that can leach into the oatmeal. A Mason jar, old jam jars, or a glass jar designed for overnight oats is ideal.
Substitutions
We like these oats the way they are, but feel free to mix them up however you would like. Here are some great swaps:
- Milk: You can swap out the milk for your favorite almond or other plant-based milk. Vanilla almond milk would be a great choice. Try adding Greek yogurt for even more protein and creaminess.
- Other PB2 varieties: PB2 comes in several flavors, including vanilla almond, cocoa, brownie, cookie, and even a crunchy peanut butter variety, so feel free to experiment. You can also substitute regular peanut butter, though it will increase the calories and fat in the finished recipe.
- Jam: We love the addition of fruity jam because it tastes like a peanut butter and jelly sandwich, but if that's not your thing, you can omit the jam and add a sweetener of your choice. Maple syrup or brown sugar are great options.
Swaps
- Fluffernutter Stir 1 to 2 tablespoons of marshmallow fluff into the oats before serving, or swirl it on top with sliced bananas for a nostalgic peanut butter sandwich-inspired breakfast.
- Chocolate peanut butter Add 1 to 2 teaspoons of unsweetened cocoa powder to the oat mixture before chilling. You may want an extra splash of milk since cocoa absorbs liquid.
- Chocolate tahini Swirl 1 to 2 tablespoons of chocolate tahini spread into the finished oats before serving. Top with sesame seeds or dark chocolate shavings.

Meal prepping and storing overnight oats
Nothing beats having a good breakfast ready on the go. You can easily prep these in advance and store them in the refrigerator for up to 5 days. Each day, remove one container and add your toppings right before eating. Bam-the workweek got easier!
