What is baked oatmeal?

Baked oatmeal or Amish-style oatmeal is a traditional oatmeal casserole. It uses many of the same ingredients as the stove-top version but with the addition of eggs and a little baking powder to help bind it all together and rise a bit in the oven.

Additionally, Amish oatmeal can be prepared plain or with toppings such as fruit, maple syrup, or nuts. We love ours with a nice dollop of Greek vanilla yogurt.

  • Milk Use your favorite milk, such as whole, 1%, 2%, or non-dairy milk.
  • Eggs You will need 2 large eggs.
  • Oats Use old-fashioned oats or rolled oats. Avoid the quick cooking and instant varieties as they won't cook up the same.
  • Butter Unsalted.
  • Baking powder To help it rise a bit in the oven.
  • Salt Brings the flavors together.
  • Maple syrup and brown sugar to sweeten up the oatmeal. We like the contrast between the 2 different sweeteners.

  • Cinnamon A little warm spice complements the blueberries.
  • Blueberries Fresh or frozen blueberries, or you can substitute another fruit here.

Expert tip

Reserve a few blueberries to arrange on top of the batter right before placing it in the oven. This will help evenly distribute the fruit in the pan.

How to serve this Amish-style oatmeal

Amish-style oatmeal can be served warm right out of the oven or at room temperature. You can also serve it as is, without any toppings, or you can add your favorites for added texture and flavor. Here are some great ideas for you to try with your oatmeal.

  • Splash of milk This is our husband's favorite!
  • Yogurt Try adding some Greek or regular yogurt. We love topping ours with a dollop of vanilla Greek yogurt. It feels and tastes like whipped cream, but healthier.
  • Sweetener If you have a sweet tooth, you can add a drizzle of maple syrup or honey to the top.
  • Nuts Try adding some pecans, walnuts, or almonds for added crunch.
  • Fresh fruit You can never have enough fruit!
  • Spices Add a dash of cinnamon, cloves, or freshly grated nutmeg.

Keeping leftovers

Baked oatmeal stores well. Pre-cut the oatmeal into squares and keep it in the refrigerator for up to 5 days (that's a whole workweek of ready-made oatmeal that can be taken on the go). Store them in a lidded container or wrap them individually. When ready to reheat, microwave for 30-40 seconds or until warm.

Kitchen questions

What is the difference between rolled oats and old-fashioned oats?

Rolled oats, or old-fashioned oats, are oat groats that have gone through a steaming and flattening process. In contrast, quick oats, or instant oats, are rolled extra thin and milled for faster preparation. They are also pre-cooked, so they don't work as well in baking recipes.

How healthy is baked oatmeal?

Baked oats are a healthy breakfast option. Wholesome ingredients such as rolled oats, healthy fats, naturally sweetened fruit, and calcium-rich milk make for a nutrition-packed, whole-grain meal.

Ingredients

Makes 9

  • 1¼ cups milk (any kind)
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 2½ cups rolled oats or old-fashioned oats (not instant)
  • ⅓ cup maple syrup
  • 3 tbsp brown sugar (light or dark)
  • ½ tbsp baking powder
  • 1½ tsp ground cinnamon
  • ¼ tsp Kosher or fine sea salt
  • 4 tbsp unsalted butter, melted and slightly cooled
  • 1¼ cups fresh or frozen blueberries

Equipment

  • 9-inch by 9-inch baking pan, or equivalent

Method

  1. Preheat the oven to 350°F. Grease a 9-inch by 9-inch baking pan with butter.

  2. In a medium-sized bowl, lightly whisk the milk and the eggs.

  3. Add the remaining ingredients, (minus the blueberries) to the bowl, and whisk until the ingredients are incorporated.

  4. Stir in the blueberries. Pour the mixture into the prepared baking pan. Bake at 350°F for 35-45 minutes until golden brown on top and edges are a bit crispy.

  5. Serve warm or at room temperature.

Kitchen notes

  • Measure your pan. If using a smaller pan (8-inch by 8-inch), you may need to add additional baking time. The recipe can also easily be doubled.
