Instructions

  1. Combine coarsely chopped hazelnuts, vodka, and brandy in a quart jar. Seal tightly. Shake the jar every few days and allow the mixture to steep for a minimum of 2 weeks (or up to 4 weeks for a more intense flavor).
  2. In a small saucepan over medium heat, combine water, erythritol, and xylitol. Bring the mixture to a boil and simmer for 5 minutes, stirring occasionally, until the sweeteners are completely dissolved and the syrup has slightly thickened. Remove from heat and let cool completely.
  3. Once the sweetener syrup is cool, add it to the hazelnut and alcohol mixture in the jar, along with the hazelnut extract and vanilla extract. Seal the jar again, shake well to combine all ingredients, and let it steep for an additional week.
  4. Prepare a large sieve by placing it over a bowl and lining it with several layers of cheesecloth or a few coffee filters.
