Our own summer kicked off with an unforgettable trip to the Lost Lake Campground, nestled majestically near Oregon’s iconic Mt. Hood back in June. It was an incredible opportunity to get the kids unplugged and immersed in nature. The following morning, we rose early to hike the entire perimeter of the lake, squeezing in a bit more invigorating exercise before our drive back home. These kinds of active outings are essential for our family’s well-being and happiness, reminding us how important it is to embrace the great outdoors.

The following weekend, just before the bustling Fourth of July celebrations, we found ourselves wondering what to do. While it would have been easy to let the weekend dissolve into languid hours at home, I knew my children thrived on fresh air and physical activity. Despite their occasional complaints about wanting to “just hang around,” a bit of movement always boosts everyone’s mood and energy levels. So, we decided to try something entirely new for us: we rented bikes from Biketown (a city-wide system owned by Nike) and set off on a fantastic nine-mile ride along the waterfront.

    ground lamb
  • 8 ounces

    frozen spinach, thawed and squeezed dry
  • 1/2 cup

    crumbled feta
  • 2 cloves

    garlic, minced
  • 1 1/2 tsp

    salt
  • 1 tsp

    black pepper

Cucumber Mint Sauce

  • 1/2

    medium cucumber, grated
  • 1/2 cup

    Greek yogurt
  • 10

    mint leaves, finely chopped
  • 1/2 tsp

    ground cumin
  • 1/8 tsp

    cayenne pepper


  • Salt and pepper to taste

Instructions

SLIDERS:

  • Preheat the grill to medium-high heat, ensuring it’s ready for searing.
  • In a large mixing bowl, gently combine the ground lamb, thoroughly squeezed dry spinach, crumbled feta cheese, minced garlic, salt, and black pepper. Mix with your hands until all ingredients are well incorporated, then form the mixture into 16 uniform small slider patties.
  • Place the patties on the preheated grill and cook for approximately 3 minutes per side, or until they reach your desired doneness. For best results, avoid overcooking to maintain the lamb’s juiciness. Let the grilled sliders rest for a few minutes before serving to allow the juices to redistribute.
  • Serve these flavorful low-carb lamb sliders on crisp lettuce wraps for a truly keto-friendly option, or use your favorite low-carb rolls (such as Soul Bread Rolls for an extra treat). They’re also fantastic served open-faced with a dollop of sauce.
