  • 2 cups half and half
  • 2 cups whole milk

Instructions

  • Prepare Your Draining Station: Line two medium-sized sieves (or colanders) with clean cheesecloth or thin cotton tea towels. Place these sieves over separate bowls to catch the whey as it drains. Using two sieves speeds up the draining process significantly.
  • Heat the Dairy Mixture: In a large, heavy-bottomed saucepan, combine the heavy cream, half and half, whole milk, and salt. Place the saucepan over medium heat. Slowly bring the mixture to a gentle boil, stirring occasionally to prevent scorching. Once it reaches a gentle boil (look for small bubbles around the edges and light steam), immediately reduce the heat to medium-low. The goal is a gentle simmer, not a vigorous boil, to ensure the curds form properly without becoming tough.
  • Form the Curds: Stir in the white vinegar. Continue to simmer very gently, stirring occasionally, for about 5-10 minutes. You will notice the cream mixture begin to separate: solid curds will form and float to the top, while a yellowish, watery liquid (the whey) remains below. The curds will start to clump together. If, after 10 minutes, the separation isn’t clear, you can add another teaspoon of vinegar and continue simmering for a few more minutes.
  • Separate Curds from Whey: Once the curds have visibly separated and clumped, remove the saucepan from the heat. Using a slotted spoon, carefully scoop out the curds and divide them evenly between your two prepared, lined sieves. This typically takes at least 4 hours, but can extend up to 8 hours for a firmer cheese. For faster draining, you can gently gather the edges of the cheesecloth or tea towels, twist them slightly, and hang the bundles over a sink or a deep bowl to encourage the whey to drip more quickly. The longer it drains, the firmer and less moist your cream cheese will be.
  • Store Your Homemade Cream Cheese: Once the curds have achieved the smooth, thick consistency of room-temperature cream cheese, transfer them to an airtight container. Press down lightly to remove any air pockets. Refrigerate immediately.
