These Loaded Keto Cookie Bars are the kind of dessert you think about long after they’re gone. They’re buttery, chocolatey, and studded with crunchy pecans and peanut butter cups for contrast. I developed this version based on a popular keto blondie base because I wanted a dessert that was ultra-gooey but still gentle on blood sugar.

This recipe has become a comforting go-to in my kitchen. They’re easy to make, store well, and deliver big flavor in a small portion — which is helpful when you’re trying to keep carbs under control. The combination of almond flour, a granular keto-friendly sweetener, collagen for added gooeyness, and sugar-free chocolate chips makes these bars both satisfying and low in net carbs.

Ingredients and Substitutions

  • Almond flour: This recipe is almond flour–based. Coconut flour and other nut meals won’t give the same texture.
  • Sweetener: An erythritol-based brown sugar replacement gives the best flavor here. Allulose or xylitol can be used but will affect texture and browning; see the Sweetener Options section below.
  • Collagen: Collagen peptides add extra gooeyness. If you don’t have collagen, you can skip it or add an extra egg yolk to the dough.
  • Chocolate chips: Sugar-free dark chocolate chips work well; choose a brand you like.
  • Peanut butter chips: Sugar-free peanut butter chips, white chocolate chips, or extra chocolate chips are all fine.
  • Pecans: Chopped pecans add crunch; walnuts are an excellent substitute.
  • Peanut butter cups: Use sugar-free peanut butter cups or a chopped low-carb homemade version.
  • Baking staples: Butter, egg, baking powder, vanilla, and a pinch of salt.

How to Make Keto Cookie Bars

  1. Combine the dry ingredients: Whisk together the almond flour, sweetener, collagen (if using), baking powder, and salt.
  2. Add the wet ingredients: Stir in melted butter, the egg, and vanilla until the mixture is uniform and slightly thick.
  3. Stir in the mix-ins: Fold in chocolate chips, peanut butter chips, chopped pecans, and chopped keto peanut butter cups.
  4. Press into the pan: Press the dough evenly into a lightly greased 9×9-inch baking pan.
  5. Bake: Bake at 325°F for 15–20 minutes, until the top is golden and just barely set — you want them gooey.
  6. Cool: Allow the bars to cool completely in the pan before slicing to ensure clean cuts and the right texture.

Carolyn’s Tips for Success

Bakeware: Metal pans bake faster and produce slightly firmer bars; glass or ceramic will take longer and yield a softer center.
Underbaking: For maximum gooeyness, remove the bars when the center still looks a touch underdone — they will finish setting as they cool. If you prefer firmer bars, bake until the center is fully set.
Servings: Cut into 20 bars to keep portion size and carb counts moderate. These bars are rich, so a smaller serving is usually satisfying.

Sweetener Options

Erythritol-based sweeteners (especially granular brown sugar alternatives) give a great texture and flavor. Allulose will brown more and produce a softer, cakier result, so watch the bars closely while baking. Xylitol can also be used but is toxic to pets, so avoid it if animals are in the home.

These Loaded Keto Cookie Bars are packed with chocolate, pecans, and peanut butter cups. Rich, buttery, and perfect for low-carb dessert cravings.

Ingredients

  • 2 cups (224 g) almond flour
  • 1/2 cup (100 g) brown sugar replacement (erythritol blend recommended)
  • 1/3 cup (about 79 g) collagen peptides (optional)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (113.5 g) butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 ounces (85 g) sugar-free chocolate chips
  • 3 ounces (85 g) sugar-free peanut butter chips (or white chocolate)
  • 1/3 cup (36 g) chopped pecans
  • 4 keto peanut butter cups, coarsely chopped

Instructions

  1. Preheat the oven to 325ºF and lightly grease a 9×9-inch baking pan.
  2. In a large bowl, whisk together the almond flour, sweetener, collagen (if using), baking powder, and salt. Stir in melted butter, egg, and vanilla until well combined.
  3. Fold in chocolate chips, peanut butter chips, chopped pecans, and chopped peanut butter cups until evenly distributed.
  4. Press the dough into the prepared pan and bake 15–20 minutes, until golden and just barely set on top.
  5. Remove from the oven and let cool completely in the pan before cutting into bars.

Notes

Storage: Store bars in a covered container at room temperature up to 5 days or in the refrigerator up to 10 days. For best texture, bring chilled bars to room temperature briefly before serving.
