Pistachio ice cream wasn’t always my top choice—store-bought versions often use an artificial bright green color that puts me off, and I tend to think of pistachios as a savory snack more than a dessert ingredient. After creating a successful Keto Pistachio Cake, though, I gained a new appreciation for how well pistachios play with sweet flavors. Because so many people love pistachio ice cream, I experimented until I developed a keto-friendly version that keeps real pistachio flavor, avoids artificial color and excessive sweetness, and still scoops nicely from the freezer.

Recipe Highlights

Simple and quick: The Creami method makes this recipe easy to prepare using six basic ingredients.
Silky texture: The finished ice cream is velvety and remains scoopable straight from the freezer.
Clean ingredients: Made with real pistachios—no artificial colors or flavoring—so the nutty taste is natural and pronounced.
Keto-friendly: No refined sugar and low net carbs per serving, making this suitable for low-carb diets.

Ingredients and Substitutions

  • Pistachios: Roasted pistachios provide more depth of flavor, but raw pistachios work if that is what you have on hand. Use unsalted pistachios if you want full control over seasoning.
  • Heavy cream: For a dairy-free alternative, coconut cream can be used. Expect a slightly different mouthfeel and a touch more iciness when frozen.
  • Almond milk: Any unsweetened low‑carb milk substitute will work to keep carbs down while providing the needed liquid.
  • Sweetener: Allulose is recommended because it helps the ice cream stay soft after freezing. Xylitol is another option; erythritol tends to make frozen desserts firmer.
  • Cream cheese: A small amount stabilizes and emulsifies the base, improving texture and scoopability.
  • Pantry staples: Vanilla extract and a pinch of salt enhance and balance the flavors.

How to Make Keto Pistachio Ice Cream

  1. Grind the pistachios: Use a food processor or high-powered blender to grind the pistachios until they are very fine and almost form a paste. Finely ground nuts help produce a smoother texture.
  2. Blend the base: Add the heavy cream, almond milk, sweetener, softened cream cheese, vanilla, and a pinch of salt to the blender. Blend until everything is fully combined and smooth.
  3. Freeze: Pour the mixture into an ice cream canister or shallow freezer-safe container. Freeze until completely solid, typically 24 hours for a canister-style method. For shallow containers, follow the alternate freezing method described below.
  4. Process: If using a Creami or similar machine, follow the manufacturer’s instructions for light ice cream settings, then re-spin as needed until the texture is creamy and uniform. If you used the shallow container method, stir periodically while freezing to minimize ice crystals.

Carolyn’s Tips for Success

For the smoothest texture, grind the pistachios as finely as possible before adding the liquids. If you’re freezing in a Creami container, leave the lid off while the mixture freezes to minimize bumps forming on the surface—an even top helps the machine process more effectively. For added texture and contrast, sprinkle chopped salted pistachios on top of each serving or fold them in as a mix‑in following your machine’s instructions.

How to Make This Without a Ninja Creami:

You can make this recipe without specialized equipment, though the texture may be slightly different. Below are reliable alternatives.

  • Conventional ice cream maker: Churn the blended mixture according to your machine’s instructions until it reaches a creamy consistency, then transfer to an airtight container and freeze until firm.
  • Ice cube + blender method: Freeze the base in ice cube trays, then blend the frozen cubes in a high-powered blender until smooth. This works well for making small batches.
  • Blender + shallow freezer method: Blend everything until smooth, pour into a shallow, freezer-safe container, and freeze. Stir vigorously every 30–60 minutes for the first few hours to break up ice crystals. This approach is the most hands-on and will likely yield a slightly icier result.

Keto Pistachio Ice Cream

Created by: Carolyn
Servings: 4 servings
Prep Time 15 minutes
This easy, small-batch keto pistachio ice cream highlights real nutty flavor and a satin-smooth texture. It’s a great low-carb treat for warm days or whenever you want a creamy, satisfying dessert without added sugar.

Equipment

Ninja Creami or similar ice cream processor

Ingredients

  • 1/2 cup (61.5 g) roasted pistachios, unsalted
  • 2/3 cup (157.73 ml) heavy whipping cream
  • 2/3 cup (157.73 ml) unsweetened almond milk
  • 1/3 cup (63.33 g) sweetener, allulose recommended
  • 1 ounce (28.35 g) cream cheese, softened
  • 1/2 tsp vanilla extract
  • Pinch salt

Instructions

  • 1. In a food processor or high-powered blender, grind the pistachios until they are finely ground and nearly form a paste.
  • 2. Add the heavy cream, almond milk, sweetener, softened cream cheese, vanilla, and a pinch of salt. Blend until the mixture is smooth and fully combined.
  • 3. Pour the blended mixture into a Creami canister or a freezer-safe container and freeze until solid. For best results with a Creami canister, freeze for 24 hours and leave the lid off while freezing to avoid surface bumps.
  • 4. Process in the Creami on the light ice cream setting. If necessary, re-spin to reach an ultra-smooth consistency.
  • 5. If the ice cream is too soft after processing, return it to the freezer for about an hour to firm up before scooping.

Notes

Storage: Store the ice cream in an airtight container in the freezer for up to three months for best quality. To prevent freezer burn, press a piece of parchment or plastic wrap directly against the surface before sealing the container.
