Mastering the Art of Stuffed Flank Steak
Creating this stuffed flank steak involves a few key steps that ensure maximum flavor and a beautiful presentation. First, selecting a high-quality flank steak is essential. This cut is lean and flavorful, making it an excellent choice for stuffing, as the filling adds moisture and richness. The process begins by butterflying the steak, which means carefully slicing it horizontally to create a larger, thinner surface area, perfect for spreading our delicious fajita filling. Once butterflied, season it generously with salt and pepper to enhance the natural beefy flavor.
The heart of our fajita-stuffed creation lies in its vibrant filling. A medley of thinly sliced green, red, and orange bell peppers, along with sweet onions, are sautéed until tender-crisp. This creates a beautiful array of colors and a delightful texture contrast against the steak. The vegetables are then seasoned with a robust taco seasoning blend, infusing them with authentic fajita spices like cumin, chili powder, and paprika. For an extra layer of indulgence and a slight kick, we add thin slices of pepper jack cheese. As the steak grills, the cheese melts, creating a creamy, spicy counterpoint to the savory beef and crisp-tender vegetables.
Grilling for Perfection: Tips for Your Stuffed Flank Steak
The grilling process for this Fajita Stuffed Flank Steak is a crucial part of achieving its tender, juicy outcome. We start by preheating the grill to medium-high heat. For gas grills, this means setting your burners to achieve a strong, consistent heat for searing. If you’re using a charcoal grill, arrange your coals for indirect heat, creating a cooler zone for slower cooking after the initial sear. The key is to achieve a beautiful, caramelized crust on the exterior while allowing the interior to cook evenly and the cheese to melt into gooey perfection.
Once your flank steak is butterflied, seasoned, and generously layered with the colorful pepper and onion mixture and slices of pepper jack cheese, it’s time to roll it up. Roll it tightly from the end with the most filling towards the less filled end, ensuring the seam is secure. This compact roll helps hold everything in place. Use kitchen twine to tie the roll at several intervals; typically, 5 to 6 pieces of twine will suffice to maintain its shape during grilling. A final sprinkle of salt and pepper on the exterior adds another layer of seasoning and aids in developing a delicious crust.
Place the tied steak roll over direct heat on your preheated grill. This initial searing phase is vital for browning all sides, creating that desirable crust and locking in juices. Aim for about 2 minutes per side, rotating carefully until an even golden-brown is achieved. After searing, move the stuffed flank steak to the indirect heat zone of your grill. If you’re using a gas grill, this means turning off one or more elements and placing the steak over the unlit section. Position the steak with the seam facing upwards; this clever trick minimizes cheese leakage as it melts. Continue to cook over indirect heat until your desired level of doneness is reached. For a perfect medium-rare, an internal temperature of 125°F to 135°F is ideal, as measured by an instant-read thermometer. Don’t be alarmed if some cheese begins to ooze out; it’s a delicious sign of a well-stuffed steak! A helpful tip: keep a piece of aluminum foil nearby. If you notice excessive cheese escaping, simply place the steak roll on the foil during the indirect cooking phase to catch all that molten goodness. Many find this cheesy deliciousness irresistible, often enjoying it with a spoon straight off the foil before slicing the steak. Finally, remove the steak to a tray, tent it loosely with foil, and let it rest for 10 minutes. Resting is crucial as it allows the juices to redistribute throughout the meat, ensuring every slice is incredibly tender and flavorful. Once rested, remove the twine, slice against the grain into beautiful pinwheels, and serve immediately.
A Flavorful Feast: Serving Your Stuffed Flank Steak
Once your beautifully grilled and rested Fajita Stuffed Flank Steak is ready, the final step is to slice and serve. Removing the kitchen twine and cutting the steak into thick, juicy rounds against the grain will reveal the stunning spiral of colorful peppers, onions, and melted cheese within. Each slice is a perfect portion, offering a balanced bite of savory beef and vibrant fajita flavors. This dish stands beautifully on its own, a complete meal packed with protein and vegetables, making it an excellent choice for a satisfying low-carb dinner. For those who enjoy complementing their steak, consider serving it with fresh avocado slices, a dollop of sour cream or a tangy homemade salsa. Low-carb side dishes like cauliflower rice, grilled asparagus, or a simple green salad with a zesty vinaigrette would also pair wonderfully, creating a well-rounded and delightful meal. This recipe truly transforms a simple flank steak into an unforgettable culinary experience.

Fajita Stuffed Grilled Flank Steak
Servings: 6
Prep Time 15 mins Cook Time 45 mins Total Time 1 hr
Tender juicy grilled flank steak stuffed with peppers, onions, and cheese. A wonderful low carb steak fajita recipe you won’t want to miss.
Ingredients
- 2 tbsp avocado oil
- 1/2 green pepper, thinly sliced
- 1/2 red pepper, thinly sliced
- 1/2 orange pepper, thinly sliced
- 1/2 onion, thinly sliced
- 3 tbsp taco seasoning
- 1 1/2 pound flank steak, butterflied
- Salt and pepper
- 4 ounces pepper jack cheese, thinly sliced
Instructions
-
Preheat the grill to medium high. If using a charcoal grill, prepare it for indirect heat.
-
In a large skillet, heat the oil over medium heat until shimmering. Add the peppers and onion and sauté until just tender, about 5 to 7 minutes. Add the taco seasoning and continue to cook another 2 minutes.
-
Lay the flank steak open like a book on a work surface. Sprinkle with salt and pepper. Arrange the peppers and onions over so that they are all lying with the grain of the meat. Leave about 2 inches at one end of the meat with no fillings on it (this helps when rolling it up). Arrange the slices of pepper jack cheese overtop of the peppers and onions.
-
Starting at the end that is well covered by fillings and working toward the uncovered end, roll the flank steak up tightly. Secure well with 5 or 6 pieces of kitchen twine. Sprinkle with more salt and pepper.
-
Place the roll on the grill over direct heat and brown on all sides, about 2 minutes per side. Then move the roll over indirect heat (if using a gas grill, turn off one element and set the roll over this part). Place so that the seam of the roll is facing up (less cheese will leak out this way!)
-
Let the flank steak continue to cook over indirect heat until cooked to your liking. About 125F to 135F on an instant-read thermometer for medium rare. If your cheese is melting and leaking out too much, place the roll on a large piece of tin foil and continue to cook.
-
Remove to a tray and tent with foil. Let rest 10 minutes. Slice and serve.
