  • Alternative Sweeteners: If allulose or BochaSweet aren’t readily available, you can certainly use powdered Swerve as your sole sweetener. However, be aware that the curd might have a slightly gritty texture after chilling due to erythritol’s tendency to recrystallize at cooler temperatures.
  • Patience with Setting: When using allulose or BochaSweet as the primary sweetener, the curd and filling may take a bit longer to set fully. In one of my initial attempts with more allulose, it took a full 48 hours before the tart could be sliced perfectly. Plan accordingly if you’re experimenting with sweetener ratios.

  • Expedited Setting: For best results, the mascarpone filling needs to set properly. I highly recommend placing the entire tart into the freezer for about an hour to expedite this process. Once the filling is firm, you can then carefully spread the remaining lemon curd over the top, creating that stunning dual layer, and refrigerate until fully set.

Planning Ahead: Can You Make Keto Lemon Tart in Advance?

Absolutely, and in fact, I highly recommend preparing this keto lemon tart in advance! Allowing it to chill and set for several hours, or even a full 24 hours, significantly enhances its flavor and texture. The layers have time to meld, and the lemon notes deepen beautifully.

For optimal freshness and to maintain that vibrant lemony zest, I suggest making this tart no more than two days ahead of when you plan to serve it. Store any leftovers tightly wrapped in the refrigerator. While I haven’t personally tried freezing this specific tart, I suspect that freezing may alter the delightful consistency of the lemon curd topping, so it’s best enjoyed fresh from the fridge.

  • 1 recipe Almond Flour Pie Crust

Lemon Curd

  • 3 large eggs
  • 6 tbsp powdered Swerve Sweetener
  • 2 tbsp (BochaSweet or allulose)
  • 1/4 cup (61g) freshly squeezed lemon juice
  • 2 tsp lemon zest
  • 4 tbsp butter, cut into 4 pieces

Filling

  • 12 ounces (340.2g) mascarpone cheese (or cream cheese), softened
  • 1/4 cup (45.5g) powdered Swerve Sweetener
  • 2 tsp lemon zest
  • 1/2 tsp (0.5 tsp) lemon extract
  • 1/2 cup (113g) lemon curd (from the prepared batch)

Instructions

Crust

  1. Preheat the oven to 325°F (160°C) and lightly grease a 10-inch ceramic tart pan. (A metal pan can also be used, but monitor it closely as the crust may bake and brown faster).
  2. Prepare the almond flour crust according to its recipe instructions. Press it firmly into the bottom and up the sides of the tart pan. Prick the crust all over with a fork.
  3. Bake for 15 to 20 minutes, or until the crust is golden brown. Remove from the oven and let it cool completely.

Lemon Curd

  1. While the crust is baking, begin preparing the lemon curd.
  2. In a glass or ceramic bowl placed over a pan of barely simmering water (creating a double boiler), whisk together the eggs, powdered sweeteners, fresh lemon juice, and lemon zest.
  3. Continue whisking constantly for about 10 minutes until the mixture visibly thickens. Be attentive, as it can thicken quite suddenly.
  4. Immediately remove the bowl from the heat and add the butter pieces. Allow the butter to sit for a few minutes to melt, then whisk until the curd is smooth and creamy. Let it cool for at least 15 minutes.

Filling

  1. In a large bowl, using an electric mixer, beat the softened mascarpone cheese with the powdered sweetener until thoroughly combined and smooth.
  2. Beat in the lemon zest and lemon extract until well incorporated.
  3. Add 1/2 cup of the cooled lemon curd to the mascarpone mixture and beat until the filling is smooth. Spread this creamy filling evenly into the cooled tart crust.
  4. Place the tart in the freezer for 1 hour to allow the mascarpone filling to set firmly.
  5. Once the mascarpone layer is set, carefully spread the remaining lemon curd over the top of the tart. Chill the tart in the refrigerator for at least another 3 hours (or ideally overnight) before slicing and serving.
