Strawberry Jello

  • 1 1/2 cups (354.88 g) water
  • 1/2 cup (126.5 g) 100% cranberry juice
  • 1/2 cup (91 g) powdered Swerve Sweetener
  • 1 tbsp grassfed gelatin
  • Strawberry flavoring to taste

Topping and garnish

  • 3/4 cup (178.5 g) heavy whipping cream
  • 3 tbsp powdered Swerve Sweetener
  • 1/2 tsp (0.5 tsp) vanilla extract
  • 1/2 cup (74 g) fresh blueberries
  • 1/2 cup (72 g) chopped fresh strawberries.

Instructions

  • In a large glass measuring cup, whisk together the water and enough food coloring to achieve a bright blue. Pour the mixture into a medium saucepan.
