This miraculous fathead dough creates a grain-free pastry that’s unbelievably light, subtly sweet, and melts in your mouth, challenging everything you thought you knew about keto desserts and breakfast treats.

Unlocking Culinary Creativity: The Journey to Perfect Keto Pastry

As a passionate baker and recipe developer, I often find myself deeply engrossed in culinary concepts. It’s not an obsession with tidiness or organization; my car might be a little messy, and I occasionally reuse a pan (saving water, of course!). My true fixation lies in ideas, particularly those that spark innovation in the kitchen. When a new ingredient or technique captures my imagination, it takes root, demanding exploration until a satisfactory conclusion is reached. This intense focus, while sometimes challenging for those around me (my husband deserves a medal for his patience!), consistently yields delightful results in the realm of food. It’s in the kitchen that these obsessions truly flourish, offering a form of delicious therapy.

My latest culinary fascination centers around the revolutionary mozzarella-based low-carb dough, a game-changer I first encountered on the “Up Late Anyway” blog. Initially, the idea of using mozzarella cheese to create a Danish seemed almost unbelievable, despite enthusiastic reviews from fellow low-carb enthusiasts. As I’m not a big fan of Danish pastries myself, I didn’t rush to try it out immediately. However, my perspective shifted dramatically after I experimented with Maria Emmerich’s stromboli recipe from The Ketogenic Cookbook. The way that dough came together, mimicking traditional dough so convincingly, was nothing short of astonishing. It instantly ignited a creative spark, compelling me to explore the full potential of this unique base.

The Magic of Fathead Dough: A Keto Baker’s Dream

This “fathead dough,” as it’s affectionately known in the keto community, is a marvel. Its primary components are shredded mozzarella cheese, almond flour, and an egg, often combined with a little cream cheese or butter. When melted and mixed, the mozzarella creates a stretchy, pliable dough that can be rolled, shaped, and baked much like conventional wheat-based dough. This incredible versatility opens up a world of possibilities for low-carb and grain-free baking, from savory pizzas and strombolis to sweet pastries like these chocolate swirls.

The beauty of fathead dough lies in its ability to replicate the texture and mouthfeel of traditional pastries without the high carbohydrate content. It’s naturally gluten-free, making it an excellent choice for those with sensitivities or who simply prefer a healthier alternative. The mild flavor of mozzarella disappears almost entirely in sweet applications, allowing the other ingredients to shine. This makes it a perfect canvas for creating a wide array of keto-friendly baked goods, offering both structural integrity and a delightfully tender crumb.

From Inspiration to Innovation: Crafting Keto Chocolate Swirls

With the wonders of mozzarella dough firmly established, my mind raced with possibilities. I had saved these delightful Chocolate Swirls from Lori of Recipe Girl to a Pinterest board last Christmas, always intending to give them a low-carb makeover. The challenge had always been the crust – finding a suitable grain-free alternative that could replicate the tender flakiness of a traditional pastry. When I revisited Lori’s recipe this year, the answer became strikingly clear: the fathead dough was the perfect solution. It was the ideal vehicle to transform these classic chocolate swirls into a keto-friendly masterpiece.

Of course, adapting the recipe meant making several modifications to the dough itself. To achieve a slightly larger, more substantial, and “doughier” texture, I experimented with a combination of almond and coconut flours. I also increased the proportions of all ingredients, including the crucial mozzarella. This fine-tuning was essential to ensure the dough had the right consistency and strength to hold the rich chocolate and walnut filling, while still delivering that tender, satisfying bite. The goal was to create a pastry that felt substantial and indulgent, without compromising its low-carb integrity.

The Delicious Outcome: A Keto “Pain au Chocolat” Experience

The result of this culinary experiment was truly spectacular: an incredibly delicious, tender, and deeply chocolatey pastry. These swirls weren’t merely cookies; they were more akin to lightly sweetened, chocolate-filled pastries, reminiscent of a delicate French “pain au chocolat.” We thoroughly enjoyed them for breakfast, perfectly paired with our morning coffee, making for an unexpectedly luxurious start to the day. The satisfaction of creating such a familiar and beloved treat in a low-carb format was immense.

For those looking to plan ahead, these Chocolate Walnut Swirls are also incredibly freezer-friendly. I made two logs of dough, baking one immediately and freezing the other. I can confirm that they freeze beautifully and bake up wonderfully after thawing. Imagine the convenience of having these delightful pastries ready for a festive Christmas morning breakfast or a special holiday brunch! You and your loved ones deserve such a wonderful, guilt-free indulgence. And rest assured, this is just the beginning; my exploration of mozzarella dough is far from over, with many more exciting low-carb recipes on the horizon.

Sweet low carb chocolate pastry with a tender almond flour and mozzarella crust. Yes, mozzarella! It makes the most amazing low carb, keto dough.

Inspired by Recipe Girl. Dough inspired by Up Late Anyway and The Ketogenic Cookbook.

Ingredients

Chocolate Walnut Filling:

  • 1/2 cup heavy cream
  • 3 tbsp powdered Swerve Sweetener
  • 2 ounces unsweetened chocolate, chopped
  • 1/4 tsp vanilla extract
  • 1/2 cup chopped walnuts

Dough:

  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup powdered Swerve Sweetener
  • 1 tsp baking powder
  • 1 1/2 cups shredded part skim mozzarella cheese
  • 5 tbsp butter, melted
  • 1 large egg
  • 1/2 tsp vanilla extract
  • Powdered Swerve Sweetener, for sprinkling

Instructions

Chocolate Walnut Filling:

  1. In a small saucepan over medium heat, combine heavy cream and powdered sweetener. Whisk to combine and bring to just a simmer. Add chocolate and let sit 5 minutes, then whisk until smooth. Add vanilla extract.
  2. Set aside while preparing the dough.

Dough:

  1. Preheat oven to 350F (175C) and line a large baking sheet with parchment paper or a silicone liner.
  2. In a medium bowl, combine almond flour, coconut flour, sweetener, and baking powder. In a large saucepan, melt mozzarella cheese over low heat until it can be stirred together into a cohesive mass.
  3. Remove from heat, then add melted butter, egg, and vanilla extract to the melted cheese. Stir vigorously to combine. Gradually mix in the dry almond flour mixture until a dough forms. It may still have some visible streaks of cheese.
  4. Turn the dough out onto a parchment-lined surface. Knead gently for a minute or two until the dough is uniform and smooth.
  5. Divide the dough into two even pieces. Place one piece of dough between two sheets of parchment paper and roll out into a long rectangle, approximately 6 by 12 inches (15×30 cm). Repeat with the second piece of dough.

To Assemble:

  1. Spread half of the prepared chocolate mixture evenly over each rolled-out dough rectangle, leaving a 1-inch border along the long sides and a 1/2-inch border on the short sides. Sprinkle each with 1/4 cup of chopped walnuts.
  2. Starting from one long end, carefully roll up the dough tightly into a log. Pinch the seam firmly to seal. Pinch and seal the ends of the log as well to contain the filling.
  3. Optional: The rolled dough logs can be frozen at this point for future baking. If freezing, wrap tightly in plastic wrap and then foil. Thaw completely in the refrigerator before baking.
  4. Place the dough logs onto the prepared baking sheet. Bake for 15 to 20 minutes, or until the pastries are golden brown and feel just firm to the touch.
  5. Remove from the oven and allow them to cool completely on the baking sheet on a wire rack. It is crucial to let them cool fully before slicing, as the warm chocolate filling will be very fluid and may ooze out if cut too soon.
  6. Once cooled, generously sprinkle with powdered Swerve Sweetener. Slice each log into approximately 1/2-inch (1.25 cm) thick swirls to serve. Enjoy your grain-free, low-carb delight!
