  • 1 1/2 cups sugar-free eggnog base (see recipe notes), room temperature
  • 2/3 cup powdered Swerve Sweetener, divided
  • 1/2 tsp rum extract (can also use vanilla extract)
  • 1/2 tsp ground nutmeg
  • 2 tbsp water
  • 2 tsp grassfed gelatin
  • 1 cup whipping cream
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the pie crust according to the provided directions and bake at 325°F (160°C) for approximately 20 minutes. Once baked, remove from the oven and allow it to cool completely before proceeding.
  2. In a large mixing bowl, thoroughly whisk together the room temperature eggnog base, 1/3 cup of the powdered sweetener, your chosen flavoring (rum or vanilla extract), and the ground nutmeg until well combined.
  3. In a separate small bowl, whisk together the water and gelatin until the gelatin begins to bloom. Microwave this mixture on high for about 30 seconds, then whisk again vigorously until the gelatin is fully dissolved and clear. Immediately whisk this dissolved gelatin mixture into the eggnog mixture, ensuring it is fully incorporated.
  4. In another large bowl, using an electric mixer, beat the whipping cream with the remaining 1/3 cup of sweetener and the vanilla extract until it forms stiff peaks. The cream should be firm enough to hold its shape.
  5. Gently fold about 3/4 of the whipped cream into the eggnog and gelatin mixture. Continue folding until no streaks of whipped cream remain and the mixture is uniformly combined and airy. (Remember to reserve the remaining whipped cream for decorating the top of the pie later).
  6. Carefully pour the creamy eggnog filling into your prepared and completely cooled pie crust. Smooth the top surface with a spatula to create an even layer.
  7. Refrigerate the pie until it is fully set, which will take at least 3 to 4 hours. For best results and a perfectly firm pie, chilling overnight is recommended.
  8. Before serving, garnish the chilled pie with the reserved whipped cream and a light sprinkle of additional ground nutmeg for a beautiful presentation and enhanced flavor.

Notes

Eggnog base: This refers to the almond milk eggnog recipe before any additional whipped cream has been incorporated. If you prepare your eggnog base ahead of time and chill it, make sure to let it come to room temperature before you start whisking in the other pie ingredients. This is essential for the gelatin to properly activate and set the pie.

Please note: You will only require a half-recipe of the overall eggnog for this pie. Even then, you might not use every last drop – expect to have approximately 3/4 cup of eggnog leftover. This extra eggnog is perfect for a festive holiday cocktail for one. Cheers!
