It’s where my children were born and spent the formative years of their young lives. How could I not carry with me millions of cherished memories, each one a tiny treasure etched into my heart? Despite the notoriously long and often harsh winters, New England boasts an abundance of beauty and charm that captures the soul. The rugged coastline, the serene beaches, the gently rolling farmlands, and, of course, the spectacular, flaming foliage that transforms the landscape into a painter’s masterpiece every fall.

The Irresistible Allure of Apple Picking

And then there’s apple picking – a quintessential fall ritual that I simply cannot forego. I understand that apples are relatively high in carbohydrates, but some traditions are just too precious to abandon. Every autumn, it is an absolute must to take my children apple picking, often twice. And inevitably, I return home with an absurd bounty of apples, far more than we could ever reasonably consume. But it’s more than just the fruit; it’s the experience, the crisp air, the laughter in the orchards, the feeling that everything is right with the world. I absolutely adore it.

Yes, I am well aware that the West Coast offers a plentiful supply of apples. However, I can assure you that apple picking there will never quite capture the same magic. Nothing, in my opinion, rivals New England in its full fall glory. Perhaps Ontario comes close in terms of vibrant foliage, but there’s a unique enchantment to being in a quaint New England town. Imagine houses dating back to the 1700s, ancient stone markers in graveyards from the 1600s, and the iconic white New England church standing majestically against a backdrop of deep reds and golds from ancient sugar maples. It’s truly breathtaking.

At times, it feels like stepping onto a movie set, where wise old professors might be found expanding the minds of bright but troubled young students within venerable stone college buildings. This scenery always evokes a profound sense of nostalgia in me, leaving a bittersweet ache in my heart because such perfect beauty is inherently fleeting. It’s a fleeting moment of awe that resonates deeply.

So, true to tradition, we embarked on our apple-picking adventure this fall, once again returning with an abundance of apples. While I cannot eat them in large quantities, I certainly find ways to incorporate small amounts into my low-carb lifestyle. I often enjoy a small, freshly picked apple before a run or an intense workout, knowing I’ll quickly burn off the natural sugars. I simply can’t resist that crisp, tart crunch – it’s an experience I need to savor a few times each autumn, even if only for a fleeting moment. Ingredients

  • 1 1/2 cup almond flour
  • 1/2 cup flax seed meal (I used Organic Golden Flax from Bob’s Red Mill)
  • 1/3 cup Swerve Sweetener
  • 1/4 cup unflavoured whey protein powder
  • 1 tbsp ground cinnamon
  • 2 tsp baking powder
  • 4 large eggs, room temperature
  • 1 cup finely chopped or grated apple
  • 3/4 cup almond milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp apple extract, optional (helps intensify flavor)

Instructions

  1. Preheat a waffle iron to medium heat and grease if necessary.
  2. In a large bowl, whisk together the almond flour, flax seed meal, sweetener, whey protein powder, baking powder, and cinnamon.
  3. Stir in the eggs, chopped apple, almond milk, melted butter, vanilla extract, and apple extract until all ingredients are well combined.
  4. Spoon a few tablespoons of batter into each section of the preheated waffle iron and close the lid. Cook for 4 to 6 minutes, or until golden brown on both sides. (The exact amount of batter and cooking time will vary depending on your specific waffle iron.)
  5. Carefully remove the cooked waffles and repeat the process with the remaining batter until it’s all used.
  6. Serve your delicious low carb apple cinnamon waffles warm, perhaps with a sugar-free syrup or, for an extra special touch, my sugar-free caramel sauce. Enjoy!
