Homemade Thai Curry Paste

Ingredients
- ¼ to ½ ounce red chilies, fresh or dried
- ½ stalk lemongrass, minced OR 2 tbsp bottled lemongrass (I used Gourmet Garden)
- 4 cloves garlic, chopped
- 1 shallot, chopped
- 2 tbsp cilantro leaves, I used frozen cubes
- 1 tbsp grated ginger OR galangal root, I have no idea where to get galangal so I used ginger
- 1 tsp ground cumin
- ¾ tsp ground coriander
- ½ tsp salt
- 1 tbsp fish sauce
- 1 tbsp lime juice
Instructions
- Place all ingredients in the bowl or container of a food processor, blender, or chopper attachment. Blend until it forms a thick paste.
- Use as a marinade for chicken, meat, or seafood, or as a seasoning in curries, soups, and stews.

Serves 8. Each serving has approximately 1.7 g of carbs.
