Low-Carb Keto Granola Recipe for Air Fryer (Crunchy & Fast)

I started making my own grain-free keto granola about 15 years ago when I wanted make-ahead breakfasts, and it’s still one of my favorite recipes. It tastes much better than store‑bought versions. Recently I experimented with the air fryer and was delighted to have crunchy low‑carb granola in about half the oven time.

Recipe Highlights

Easy to make: Pulse nuts and seeds, toss with sweetener and melted butter, then air‑fry to golden, crunchy perfection.
Minimal ingredients: This grain‑free granola replaces oats with a mix of nuts, seeds, and coconut.
Perfectly crispy: The air fryer helps achieve a crisp texture quickly.
Customizable: I emphasize pecans and use maple extract, but swap in your favorite nuts, seeds, and extracts.
Make‑ahead: Stores well for weeks, so it’s a convenient breakfast or snack.

Ingredients and Substitutions

  • Nuts and seeds: Any combination works. If you’re allergic to almonds, use extra pecans or another nut.
  • Coconut: Flaked coconut adds an oat‑like texture. Use sliced almonds if you prefer no coconut.
  • Sweetener: For best crunch, use an erythritol‑based granular sweetener. See the Sweetener Options section for more details.
  • Butter or oil: Melted butter crisps and helps clusters form; avocado or coconut oil can be used instead.
  • Extract: Maple extract delivers a maple‑pecan flavor; vanilla works well too.

How to Make Keto Air Fryer Granola

  1. Grind the nuts: Combine nuts, seeds, and coconut in a food processor and pulse until it resembles coarse crumbs with some larger pieces.
  2. Add the sweetener: Transfer to a bowl and stir in the sweetener, then mix in the melted butter (or oil) and extract until the mixture begins to clump.
  3. Transfer to the air fryer: Remove any rack from the basket and line the bottom with parchment. Press the mixture firmly and evenly into the basket.
  4. Air fry: Cook at 300°F for 12–15 minutes, stirring a few times and pressing the mixture back down between stirs so it crisps evenly.
  5. Cool: Let the granola cool to room temperature in the basket so it sets, then break into clusters and store.

Carolyn’s Tips for Success

Air fryers vary in size. My Cosori basket is roughly 9×9 inches; if yours is smaller, work in batches so the granola crisps evenly. Remove any rack from the basket, line it with parchment for easier cleanup, and press the mixture firmly so it forms clusters. Butter tends to help the granola crisp and stick together more than oil, but avocado oil is a good substitute if you prefer.

Sweetener Options

For a crunchy texture, use a granular erythritol sweetener and avoid allulose or xylitol. Highly concentrated extracts like stevia or monk fruit can be used but may not produce as much crispness. Allulose tends to brown quickly and prevents a crisp finish, so choose your sweetener with those effects in mind.
