  • 1/3 cup coconut flour, (30g)
  • 1/4 cup whey isolate protein powder, (20g)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon salt

Wet Ingredients:

  • 2 large eggs, cold
  • 1/3 cup unsweetened almond milk, cold, (3oz/89g)
  • 1 tablespoon vanilla extract
  • 2 teaspoons white vinegar
  • 2-3 teaspoons espresso powder

Cream Together:

  • 1 stick unsalted butter, softened, (4oz/113g)
  • 1/2 cup granulated Swerve sweetener
  • 1 large egg, cold

Whipped Topping:

  • 3/4 cup heavy whipping cream, (6oz/117.5ml)
  • 1/4 cup confectioners Swerve sweetener
  • 4 tablespoons cream cheese, softened, (2oz/57g)
  • 1/2 teaspoon vanilla extract
  • 2 small pinches of xanthan gum

Optional Decoration:

  • Sugar-free chocolate, grated
  • Cinnamon
  • Coffee beans

Instructions

Cupcakes:

  1. Preheat oven to 350 degrees F (175 C) and position rack to the middle of the oven. Line a 12-cup muffin tin with cupcake liners. Add all of the dry ingredients (almond flour, coconut flour, whey isolate protein powder, baking powder, xanthan gum, salt) to a medium bowl and whisk thoroughly, breaking up any lumps. In a separate small bowl, combine the wet ingredients (large eggs, unsweetened almond milk, vanilla extract, white vinegar) and espresso powder; mix until the espresso powder melts (it will not dissolve completely).
  2. Using a hand mixer, whip the softened unsalted butter until creamy. Gradually add the granulated Swerve sweetener and continue to beat until the mixture is lightened and fluffy. Incorporate 1 cold large egg and beat again until the mixture is smooth and thoroughly combined.
  3. Add approximately 1/3 of the whisked dry ingredients to the butter mixture and beat until just incorporated. Next, add about 1/2 of the wet mixture and beat again until smooth. Follow with 1/2 of the remaining dry ingredients, beating until fully incorporated, making sure to scrape down the sides of the bowl. Add the rest of the wet ingredients, whipping until the batter appears light and fluffy, then finally add the remaining dry ingredients. Beat the entire batter until it is thick and fluffy, resembling a thick mousse rather than a stiff cookie dough.
  4. Transfer the prepared batter into a large zip-loc bag and snip off one corner, creating an opening of approximately 1/2 to 3/4 inch. Carefully pipe the batter into the bottom of each cupcake liner, filling approximately 3/4 of the liner to form a mound. Repeat this process until all 12 liners are filled. To ensure even distribution and eliminate air pockets, lift the cupcake tin a few inches off the counter and let it fall gently 3-4 times. If any peaks or points of batter form, gently swirl a finger over them to flatten.
  5. Bake the cupcakes for 20-25 minutes, or until the edges are lightly browned and the center feels springy when gently pressed with a finger, while still sounding moist.
